3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) AC in the building was not keeping the room at normal temperatures, which was observed to being affecting the open air cold holding unit. Temperature controlled foods such as yogurt, cheeses, meats and cut produce were observed to be holding at tempertures above 41*F. Discussed issue with Person In Charge (PIC) who stated that the AC is currently being worked on, but that it had been warm in the building for 2-3 hours. All temperature controlled foods were moved into the walk in refrigerator until the open air unit can hold at proper temperatures of 41*F or lower.

Discussed issue with PIC, who disposed of the chili, replaced it with a new bag and updated the date marking on the display.
