3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed multiple containers of temperature controlled foods being held in the walk in refrigerator and temperatures of 52-54*F. Person In Charge (PIC) had already called someone to come repair the unit. After discussion with PIC, the temperature controlled foods inside the unit were discarded or moved to other units (if prepared today). Walk In Refrigerator can only be used for non-temperature controlled items (beer, whole produce, bread) until it is repaired and can hold foods at proper cold holding temperatures of 41*F or lower.
