  3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed a small reach-in refrigerator directly across from the cooking line to have the following items out of appropriate cold holding temperature: caldo de res- 45F and 4 small packages of carnitas- 55F. PIC voluntarily discarded the items and stated they will monitor the unit going forward.

  6-201.13 Floor and Wall Junctures, Coved, and Enclosed or Sealed (C) (A) In FOOD ESTABLISHMENTS in which cleaning methods other than water flushing are used for cleaning floors, the floor and wall junctures shall be coved and closed to no larger than 1 mm (one thirty-second inch). Observed a large section of floor board missing behind the dishwasher/3 compartment sink area measuring approximately over a foot. PIC stated they are aware and will be fixing the area soon. Educated staff this has to be repaired within 30 days.
