  4-301.12 Manual Warewashing, Sink Compartment Requirements (Pf, C) Observed Observed red beans in large container, in the sanitize sink compartment. Also noticed food residue ring around sink that should not have been there. Please maintain the 3 Compartment sink sanitary at all times. PIC will comply. 4-501.18 Warewashing Equipment, Clean Solutions. The wash, rinse, and SANITIZE solutions shall be maintained clean. 4-302.14 Sanitizing Solutions, Testing Devices (Pf) EHS asked for demo of test strips. Chlorine strips were located but not quat, which is what EcoLb hardware dispense. Strips were eventually searched for and located but, as advised, test strips should be easily located so that they can be easily used. PIC will correct.

  6-101.11 Surface Characteristics-Indoor Areas (C) Observed oily (butter) on floors near back door and staff lockers and accumulated on many surfaces. PIC will will insure said surfaces or cleaned more often. 6-201.13 Floor and Wall Junctures, Coved, and Enclosed or Sealed (C) Observed significant accumulation of grease and or oil on equipment and walls such that it has precipitated the delamination of coving. Some coving has completely delaminated. PIC acknowledges the the issue and will seek to correct by next inspection. 6-201.17Walls and Ceilings, Attachments. (A) Except as specified in ¶ (B) of this section, attachments to wallsand ceilings such as light fixtures, mechanical room ventilationsystem components, vent covers, wall mounted fans, decorativeitems, and other attachments shall be EASILY CLEANABLE. Observed significant lent accumulation on rear air-curtain and surrounding areas. Advised PIC that said lent accumulation becomes a food safety issue when it become airborn in the kitchen. PIC will corect.
