  3-202.16 Ice (P) Observed Ice machine with mold-like growth on interior baffle. PIC will correct 5-101.11 Approved System-Source (P) Observed large bar sink that PIC said was for ice in mixed drinks and not just for cooling. The 1/2" PVC line for this sink was properly air gapped but it's Interior diameter was nearly obscured by a slime mold oozing from its end. The drain was iluminated for PIC to inspect. PIC will contact a commercial plumber to fix / replace. Reinspection of this will occur in approximately 2 weeks.

  4-204.117 Warewashing Machines, Automatic Dispensing of Detergents and Sanitizers (Pf) PIC advised that dishwsh machine is primary equip, not 3Comp. Asked for a test strip to be demonstrated in the machine. Operator did not know procedure, meaning they could not demonstrate sanitation. Chef eventually arrived and demonstrated procedure. 4-301.12 Manual Warewashing, Sink Compartment Requirements (Pf, C) Observed mainifold not properly air-gapped. PIC will employ pro to address. 4-302.14 Sanitizing Solutions, Testing Devices (Pf) Test strips were not readily available to operator at dishwash station. Test strips were eventually located and demonstrated correctly.
