Back door was open with metal screen door closed. Interviewed staff who advised that it was "even hotter in the summer" and that she used to work "back there." Please determine temperature and work to bring it down. The heat compounds conditions in the kitchen that can lean to staff perspiring on food and accelerated bacterial / fungal growth.
