4-204.115 Warewashing Machines, Temperature Measuring Devices (Pf) 4-301.12 Manual Warewashing, Sink Compartment Requirements (Pf, C) 4-302.13 Temperature Measuring Devices, Manual and Mechanical Warewashing (Pf) Observed 3 compartment sink without labeling, "WASH RINSE SANITIZE" and all three compartments used but not for sanitization. PIC advized that dishwasher is final sanitizer and they use heat. Temp was 122F. EHS advised that min temp should be 171F. Dishwasher did use sanitizer. Test strip was perfomed and 200ppm was observed. Please label sink< "WASH< RINSE< SANITIZE" Thank you.
