    3-305.11 Food Storage-Preventing Contamination from the Premises (C) 3-305.12 Food Storage, Prohibited Areas (C) Observed a rack with cut meat on castors in the back of the kitchen with two fans, one pointed up, the other dows, blowing across the meat. Observed dedris on floor around the rack that could be blown onto the meat. EHS had a discussion with the owner about a better process for curing meat--one that was more sanitary and not in a high traffic area. PIC will do.
