  6-101.11 Surface Characteristics-Indoor Areas (C) Observed various concrete floor elevations and transitions unsealed and not compliant with 3/3 radius requirement. Floors do not appear to be sealed. PIC advises that they are budgeting for standard compliance. 6-201.11 Floors, Walls and Ceilings-Cleanability (C) 6-201.13 Floor and Wall Junctures, Coved, and Enclosed or Sealed (C) 6-501.11 Repairing-Premises, Structures, Attachments, and Fixtures-Methods (C) Observed area beneath , behind and surrounding cook-top and vat fryers with significant accumulated grease on the floor and equipment. In s=consideration that the kitchen is not in continuous use, please insure floors and equipment are being maintained sanitary not only when in use but during interval of non use.
