3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed the ambient temperature of one reach-in refrigerator to be 53F. Observed the facility internal thermometer to also be withing the same ambient temperature range (55F to 60F). EHS observed several small containers of labeled mashed sweet potatoes. EHS observed the temperatures of the sweet potatoes to be 55F. PIC voluntarily discarded the containers and stated a work order will be placed for the refigerator unit.
