  • 2-102.11

2-102.11 (A),(B) and (C)(1),(4)-(16)Demonstration (Pf) 2-103.11 Person-In-Charge [PIC] Duties (Pf) At the time of inspection, the facility did not have an assigned Person-in-Charge (PIC) present, and one staff member stated that she was new to the facility. Staff demonstrated limited knowledge of food safety practices and required instruction from EHS. The facility continued to experience significant water leakage and pooling in the kitchen serve/prep area, as well as a substantial leak from the AC unit, with a mop bucket positioned underneath to collect the continuous drainage. No paper towels or other approved hand-drying methods were available for staff or patrons. Staff reported that paper towels had not been available and that cleaning rags were sometimes used to dry hands. Staff were also unable to properly demonstrate sanitizer testing. After EHS observed a significantly high chlorine concentration, staff were asked to demonstrate use of the test strips and stated they did not know whether the strips were routinely used. Staff initially attempted to test sanitizer in the incorrect sink compartment and appeared confused when the strip did not change color. After EHS provided instruction, staff correctly performed the test and obtained a high chlorine concentration. Staff acknowledged that the result indicated the sanitizer level was too high. EHS explained corrective measures and emphasized the need to test sanitizer concentration each time; however, staff responded nonchalantly and stated that she would “let them know.” The observations indicate inadequate demonstration of required food safety knowledge and inadequate PIC oversight and supervision to ensure employees understand and comply with applicable food safety practices.
