  • 7-201.11Critical

7-201.11 Separation-Storage (P) 7-206.13 Tracking Powders, Pest Control and Monitoring (P, C) 7-207.11 Restriction and Storage-Medicines (P, Pf) 7-207.12 Refrigerated Medicines, Storage (P) 7-301.11 Separation-Storage and Display, Stock and Retail Sale (P) Observed multiple violations involving the storage and control of poisonous or toxic materials and personal medications. Personal injectable medications were stored in a refrigerator with customer food items without proper separation or segregation. Additionally, cans of Raid insecticide and liquid fly killer were stored directly adjacent to food preparation equipment used for slicing tomatoes and near food items, including vinegar and sauces. The Person in Charge reported that the facility has pest control, but unable to provide the name of a company and the frequency of treatment. Facility appears to do their own pest control as evidenced by self-administered pest control measures, including the use of rodent sticky traps. The storage and use of toxic materials, medicines, and pest control products were not conducted in a manner that protects against contamination of food, equipment, utensils, and single-service articles, as required by the Food Code.

  • 3-302.11

3-302.11 Packaged and Unpackaged Food-Separation, Packaging, and Segregation (P, C) Observed repeated violation of Food Code 3-302.11. Personal injectable medications were stored in the same refrigerator as customer food items (ranch and pizza sauce), personal food items, and equipment. Additionally, multiple dissimilar items were stored together in a single chafing pan within the cold holding prep station, preventing proper separation and segregation of food. This violation has been documented during multiple previous inspections, indicating a repeated failure to maintain proper food separation and storage practices. Due to the recurring nature of this violation, the facility must implement effective corrective measures to ensure proper separation and segregation of food, personal items, medications, and equipment

  • 4-501.114

4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization—Temperature, pH, Concentration and Hardness (P, Pf) No sanitizer test strips were available at the time of inspection to verify the concentration of the sanitizing solution used for manual warewashing. Without an appropriate test method, the facility cannot ensure sanitizer is maintained at the required effective concentration for proper sanitization of food-contact surfaces and utensils. 4-601.11(A) Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils (Pf) Observed significant accumulation of grease, oil, and soil on nonfood-contact surfaces, including the ventilation hood, walls, floors, and equipment surfaces. Equipment and facility surfaces were not maintained in a clean condition to prevent the accumulation of debris and contaminants. 4-602.11 Equipment Food-Contact Surfaces and Utensils—Frequency (P, C) Observed discarded egg shells and a soiled personal frying pan in the food preparation area near the cooking line. The Person in Charge confirmed the items were used for personal food preparation and had not been removed or cleaned following use. Food-contact surfaces and utensils were not cleaned at the required frequency to prevent contamination. 4-702.11 Before Use After Cleaning (P) Food-contact equipment and utensils cannot be verified as properly sanitized prior to use because sanitizer concentration could not be confirmed due to the absence of sanitizer test strips. The facility must ensure cleaned food-contact surfaces and utensils are sanitized at the required concentration before being placed into service.
