  3-305.11 Food Storage-Preventing Contamination from the Premises (C) Observed a significant acculumation of slime/sludge on the inner walls as well as the inside parameter of the ice machine. EHS also notice an accumulation of mold-like growth inside the machine as well. EHS was able to wipe a small portion of the slime/sludge build up to show staff. Staff stated the machine is cleaning by a comapny routinely; however, she was unsure of the last cleaning service provided. EHS observed a significant accumulation of floating debris in the container used to hold the ice scooper. Observed the scopper to be sitting in the container with water accumulation and floating debris. EHS advised to clean the equip and the scooper.

  4-602.13 Nonfood Contact Surfaces (C) ICE- Observed some residue inside the ice machine above the level of the ice. Person in charge was made aware and wiped the surface to remove any residue in a manner that will not contaminate the ice. Routine cleaning and visual checks should continue to be performed to prevent future residue or buildup.
