  3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed behind the counter display refrigerator holdding desert i.e., cakes pies, etc. but also cut lettuce. Analog temperature guages were for an oven, not a refrigerator (increment gradients started at 150F). After this one guage was located, more were located in other refriigerators and removed. This was an indicator that PIC and staff were not monitoring temperatures. in any of the units. >>> Multiple foods were probed and temps were 45F to 48F. Large cut salad tub temp indicated 38F, pulled from the walk-in earlier this morning.

  5-202.13 Backflow Prevention, Air Gap (P) 5-302.11 Enclosed System, Sloped to Drain (C) Observed 3 compartment sink drain manifold to be cut and then clamped together in multiple locations. The pipe was leaking. The pipe was not air-gapped. EHS noticed a floor sink near the dishwasher and advised PIC the de could probably reach that floor sink if he replumbed the manifold to slope to the floor sink. PIC indicated understanding and will fix.

EHS noticed that the drainage for this sink used a whit PVS flex (think: pool) hose, the end of which was laying in the floor sink and showing signs of mold like growth. EHS advised PIC to replumb and air-gap. PIC understands and will fix.
