3-501.16(A)(1) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed the hot holding unit containing prepackaged chicken wings and mini tacos holding at temperatures below 135F. Observed 3 packages of wings (5 wings each) holding at temperatures between 109F to 111F. Observed 2 packages of mini tacos (6 pieces each) to be holding at 111F. PIC stated the unit was serviced recently for not holding temperatures. PIC voluntarily pulled all items for discarding, losed the unit, and stated a work order will be placed.
