  3-501.13 - Core: Thawing Addl Notes: On cook line, in cold holding drawers, packaged raw fish with statement of removing from packaging prior to thawing. Instructed employee to remove all fish from packaging to continue the thawing process. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.

  3-305.11 - Core: Food Storage - Preventing Contamination from the Premises Addl Notes: In walk in cooler and walk in freezer, boxes of food stored directly on ground. Instructed employees to store all food off of ground to prevent contamination. Food is to be stored at least 6 inches off the ground at all times to prevent contamination from the premises. Corrective Action: Correct prior to next routine inspection.

  3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: At front counter, in use wiping cloth bucket with quat sanitizer solution with a concentration of 0ppm. Employee remade sanitizer bucket with quat sanitizer solution with a concentration of 150-200ppm. Discussed more frequent changing of sanitizer wiping cloth buckets. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
