Addl Notes: TCS packaged foods found in sales floor Grab n Go refrigeration unit in an ambient air temperature of 52*F; internal temperature of egg salad sandwich at 51*F. Per PIC, foods had been stored in unit over 4 hours without monitoring. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Predefined Comment: All TCS foods improperly cold held were discarded by PIC at time of inspection (see embargo sheet). Corrective Action: Corrected at time of inspection.
