3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: -- Quat sanitizer concentration levels were undetectable for sanitizer buckets set up throughout the kitchen. The person in charge stated the chemical hose at the 3-compartment sink is not dispensing properly due to the hose dry rotting, and employees have to manually add sanitizer solution to buckets/3-compartment sink. Requested sanitizer buckets be re-filled at time of inspection to increase strength of sanitizer to proper levels of 150ppm-400ppm. Corrective Action: Corrected at time of inspection.
