PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Addl Notes: Observed cooked vegetables, chicharron as well as ribs in hot holding case with an internal temperature of 110F. looking at temperature dial it shows it placed at 110F. Person in charge states that food was put there about 2 hours ago. Had person in charge reheat foods back to 165F and raise case temperature to above 135F for hot holding. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.
