  4-302.13 (B) In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature. NOT resolved. Within 30 days, obtain an irreversible thermometer that is waterproof to verify the surface temperature of items run through the dish machine. The number that is most important is the INTERNAL temp of the machine, not the external reading: the surface temperature of items run through the machine should be at least 160F, that is why the irreversible thermometer is necessary. It will determine how hot it got on the inside of the machine. Once you obtain a temperature measuring device that can go in the dish machine, I recommend recording its temperature rather than the machine's digital reading. The machine must reach at least 180F to have items reach 160F...just because the machine reads 180 or above, does not mean items inside have reached at least 160F.
