4-602.13 Nonfood Contact Surfaces (C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observed a buildup of residue inside the ice machine above the level of the ice. Person in charge was made aware and stated they will wipe the surface to remove any residue in a manner that will not contaminate the ice. Routine cleaning and visual checks should continue to be performed to prevent future residue or buildup. Upon next inspection, verification of routine cleaning shall be performed.
