4-602.13 Nonfood Contact Surfaces (C) NonFOOD-CONTACT SURFACES of EQUIPMENT shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Observed build up of grime on the handles of the oven and hand sink. Observed build up of grime on the floors and walls near food preparation areas. Observed build up of flour on the floors and under equipment. Discussed with person in charge (PIC) that floor, walls, and equipment shall be kept clean to avoid cross contamination and prevent the attraction of pests. PIC stated that surfaces, floors, and walls will be cleaned. Verification of routine cleaning shall be performed at the next routine inspection.
