Proper Date Marking and Disposition
PRIORITY VIOLATION-3-501.18 - Priority: Ready-To-Eat Time/Temperature Control for Safety Food, Disposition. Addl Notes: Observed taco slaw, kraut and alfredo sauce 9/20 ( 2 days past discard date) in reach-in cooler. PIC discarded at time of inspection. Also observed deli meats such as ham, turkey, pastrami with a prep date of 9/16 (7 days past discard). PIC stated that deli meats were prepped day of or day prior and bin was not rotated. PIC replaced bin with a new one at time of inspection. Predefined Comment: All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Predefined Comment: RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.
