Predefined Comment: RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).

Addl Notes: Observed a large container of hash browns with the lid on ranging from 95*F to 108*F using probe thermometer (verified by person in charge) cooling in the bottom of the make-line unit. PIC stated the hash browns were prepared one hour prior to inspection and placed them in a shallow container in the walk-in to finish cooling. Corrective Action: Corrected at time of inspection. Predefined Comment: TCS foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means.
