PRIORITY VIOLATION-3-501.16(A)(1) - Priority: Time/Temperature Control for Safety Food, Hot Holding. Addl Notes: Observed baked chicken in the steam table ranging from 120*F to 124*F using probe thermometer, verified by person in charge (PIC). PIC stated the chicken was placed in the unit 20 minutes prior to inspection and reheated to 165*F at time of inspection. Also, observed individual tomato soup containers in the steam table ranging from 122*F to 125*F using probe thermometer, verified by PIC. PIC stated the soup was prepared at 9am and voluntarily discarded - see embargo form. Corrective Action: Corrected at time of inspection. Predefined Comment: Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above.
