Addl Notes: Observed sanitizer levels at dish wash machine at 0ppm. Sanitizer at mechanical dishwash machines to be at 50ppm. Dishwash unit primed and sanitizer observed to be at 50 ppm. Advised staff to check dishwasher sanitizer level at beginning of each shift. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed discard times not being shown for foods using time as control for bacteria control. Staff were documenting when food left a consistent cold hold unit, but had no discard time. Predefined Comment: All TCS foods being held under time as a control were properly time stamped at time of inspection. Predefined Comment: Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Provided time as control paperwork to assist in documentation. Corrective Action: Corrected at time of inspection.
