Proper Cold Holding Temperatures

PRIORITY VIOLATION-3-501.16(A)(2) and (B) - Priority: Time/Temperature Control for Safety Food, Cold Holding. Addl Notes: Observed sliced tomatoes (55*F) and sliced turkey (46*F) in single door refrigerator by mixers. Cold hold of food to be 41*F or lower. As per the person in charge the tomatoes were sliced today. Refrigerator stores alternativ milks and other fruits for blended drinks. Advised staff to remove items not used for smoothies and place in refrigerator with less usage to assist in maintaining foods at 41*F. Items were placed in back reach in cooler to chill back to 41*F. Staff may need to adjust temperature in unit and move items for better air flow. Corrective Action: Corrected at time of inspection.
