Addl Notes: Observed cooked tapioca boba stored at ambient temperature with an internal temperature of 72 degrees Fahrenheit. This item is included on establishment's Time as a Public Health Control procedure but was not timestamped. Per person in charge (PIC), boba was removed from heat 1 hour prior to inspection. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection.
