Addl Notes: Observed sandwich prep cooler with a minimum temperature of 48.7°F in reach-in portion and 50.3°F in prep cooler portion. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. TCS foods in cooler had been placed in unit three and a half hours prior to inspection and were moved to walk-in to rapidly cool. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Corrective Action: Correct prior to re-inspection. Reinspection will occur on 10/12/26.
