  Repeat Violation PRIORITY VIOLATION-3-501.18 - Priority: Ready-To-Eat Time/Temperature Control for Safety Food, Disposition. Addl Notes: Observed containers of cooked mushrooms and onions in a prep-style refrigerator with prep dates of 8/23 and containers of pickles prepared in the establishment with a hot pickling liquid with prep dates of 8/23 and 7/21, more than 7 days prior to the inspection. Person in charge (PIC) confirmed the dates on the labels were accurate. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). PIC voluntarily discarded the items - see embargo form. Corrective Action: Corrected at time of inspection. *SECOND CONSECUTIVE VIOLATION*
