  7-102.11 - Priority Foundation: Common Name-Working Containers Addl Notes: Observed a spray bottle with a red/orange liquid and one with a yellow liquid without a label. Person in Charge (PIC) stated that spray bottles held degreaser and detergent. PIC labeled spray bottles at time of inspection. Working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. Corrective Action: Corrected at time of inspection.

Addl Notes: Second Consecutive* Observed marinara sauce at an internal temperature of 61°F cooling in deep containers in the walk-in cooler in a deep container covered by plastic wrap. PIC stated that the marinara sauce was mixed 2 hours earlier and placed in walk-in. Marinara sauce was uncovered and transferred to shallow containers to allow for rapid cooling. Time/Temperature Control for Safety (TCS) foods must be cooled in: uncovered/loosely covered, shallow containers less than 4 inches deep, in equipment designed to rapidly cool, by using an ice bath, by using ice as an ingredient, or another effective means. Corrective Action: Corrected at time of inspection.
