Addl Notes: Observed chemical warewashing machine in active use testing 0 ppm chlorine during the inspection. Person in charge (PIC) stated the machine was recently serviced. Informed PIC chlorine levels should be maintained between 50-100 ppm for effective sanitizing of wares. PIC stated they will call the chemical company to check the warewashing machine. PIC to relocate all dishes to the 3-compartment sink. PIC to use 3-compartment sink in the meanwhile until warewashing machine is serviced. Corrective Action: Corrected at time of inspection.
