Addl Notes: Cooked potatoes and cooked beef in steam drawer measured 122-124* F internally. Person in charge said they had been put in the drawer 40 minutes ago. PIC reheated all food to 165*F at time of inspection. Please ensure all time/temperature controlled for safety food items are maintained at 135 degrees F or above when hot holding. Corrective Action: Corrected at time of inspection. Repeat violation: second consecutive.
