  4-901.12 Wiping Cloths, Air Drying Location (C) Observed cloths washer and dryer in kitchen area. Drying is missing lent trap and is not plumbed to the outside. Consequently, there is a significant amount of lent buildup throughout the kitchen. PIC will be advised and asked for solution plan and verification will occur at next inspection.

There is lent on many surfaced and in oteres the lent has combined with other debris and aerosoled grease. It appears that large collapsed cardboard boxes might be being used as mats to trap grease from the grill and prevet it from being tracked throughout. The cardboard was located / stored on a bottom shelf above the floor. Observed a number of food and non-food contact surfaces not being mainted sanitary. PIC is not on property but contact information was provided to maintenance with a request for a call and discussion.
