3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed sliced tomatoes in a reach-in refrigerator at a temperature of 48F. Observed the container to have an expiratio date of 6am on 9/26/26. Spoke with Person-In-Charge (PIC) who confirmed the refrigerator has been having some issues with freezing resulting in staff unplugging the equipment at night. Observed the ambient temperature to be 54F. PIC confimed all items in the refrigerator were placed there this morning for opening. Items were moved to another cold holding unit and a work order placed.
