3-501.16(A)(2) and (B) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observed the ambient temperature in the reach-in refrigerator (RTE foods) to be 46F. Observed the temperature of deli turkey and deli ham to be 50F. Spoke with person-in charge (PIC) who stated they have noticed the unit will hold the temperature if left alone; however, once the door opens, it rapidly loses temperature. EHS observed the ambient temperature spiked 10F after opening the door. PIC confirmd the primary walk-in refrigerator is also not being used and has a maintenance order in for repairs. PIC stated the school has been storing their refrigerator products in the freezers or at their neighboring school until it is time for use. PIC confirmed the deli ham and turkey were both retrieved from the freezer this morning about 9am (approximately 3.5 hours prior to inspection start). PIC stated much of the product was still frozen this morning when prepping food. Observed the products were completely defrosted an holding temperatures of 50F. All other items in the reach-in refrigerator were retrieved from the neighboring school this morning. PIC confirmed the facility has been using the reach-in refrigerator for the dairy products for cold holding. Observed the ambient temperature in the cold holding unit to be 41F. PIC will remove all items from the reach-in refrigerator and store in the dairy refrigerator, freezer, and back to the neighboring school. A work order will be placed for this cold holding unit as well.
