3-302.11 Packaged and Unpackaged Food-Separation, Packaging, and Segregation (P, C) Observed an uncovered chafin pan with already cooked and cooled pulled pork being stored in the refrigerator draw directly next to an uncovered chafing pan with raw chicken. The refrigetrator draws are used for all raw meat/seafood products. Reminded Person-in-Charge (PIC) about the requirements of keeping raw and cooked products separated. PIC moved the container of pulled pork. This item with be reheated on the grill to at least 165F.
