Addl Notes: Observed semi-soft Stella Alpina Taleggio cheese dated 9/25 in the prep refrigerator. Based on table 21 CFR 133 and discussion with the PIC it could not be determined if cheese was exempt from date marking. Predefined Comment: RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). PIC discarded the cheese at time of inspection. Corrective Action: Corrected at time of inspection.

6-501.111 (C) - Priority Foundation: Controlling Pests; Approved Trapping Methods/Existence Addl Notes: In the back storage room observed in the corner below stacked chairs observed rodent droppings. Observed multiple rodent bait stations on the floor in the kitchen and back storage area. Predefined Comment: Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection (10/19/2026). Discussed cleaning up rodent droppings and sealing outer entrances. Keep pest control invoice available for review during re-inspection. Corrective Action: Correct prior to re-inspection.
