Addl Notes: Observed establishment make ice cream from scratch in-house (Candy Cap Mushroom flavor). According to person in charge (PIC), the ingredient list includes raw shell eggs. PIC stated the mix is pasteurized in-house. Informed PIC that a variance/approval from the department must be obtained before pasteurizing frozen desserts in-house. Instructed PIC to discontinue the practice or obtain a variance from the department. Corrective Action: Corrected at time of inspection.
