3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: Observed two sanitizer buckets near the prep station on the west side of the kitchen, by the hand sink, with a concentration of 0 ppm of quat sanitizer. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Quat sanitizer needs to be at a concentration of 150-400 ppm. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.
