    4-901.11 - Core: Equipment and Utensils, Air-Drying Required Addl Notes: Observed small and large metal trays wet-nested on the equipment storage rack in the banquet kitchen. All equipment and food contact surfaces must be air-dried after properly cleaning and sanitizing. Person in Charge (PIC) had employees remove the wet equipment from the rack to be air dried at time of inspection. Corrective Action: Corrected at time of inspection.
