Proper Cold Holding Temperatures

Addl Notes: Observed red hot salsa, red medium salsa and green salsa on the salsa bar next to the soda machine with internal temperatures of 60-61°F. Person in charge stated that the items had been placed in the salsa bar this morning. All TCS foods improperly cold held were voluntarily discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

6-501.12 - Core: Cleaning, Frequency and Restrictions Addl Notes: Observed floor and walls behind the air fryer, and stove had an accumulation of grease and organic matter. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Person in charge stated they would deep clean behind the air fryer and stove this weekend and they also have an appointment to have their hood vent cleaned next week. Must clean physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.
