3-304.14 - Core: Wiping Cloths, Use Limitation Addl Notes: Observed an in-use wiping cloth bucket in the bar with less than 100 ppm of Quat sanitizer. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Quat sanitizer should have a concentration of 150 to 400 ppm for proper sanitization of food contact surfaces. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection.

Provide approved irreversible measuring device prior to re-inspection. Corrective Action: Correct prior to re-inspection on 10-23-26.
