PRIORITY VIOLATION-4-501.114 (A-E) - Priority: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Addl Notes: Observed kitchen wares being cleaned in kitchen mechanical dishwasher, and 0ppm chlorine (using test strips) in the final rinse. Observed crusty chemical residue at the chlorine dispenser and on top of the dishwasher. PIC immediately scheduled repair of the unit. Staff to clean/sanitize wares in the warewashing sink until repairs are comlete. Corrective Action: Corrected at time of inspection.

Addl Notes: Observed detergent dispenser canister empty at in-use mechanical dishwasher. Digital readout also indicated to refill the detergent. Please train staff as needed regarding proper usage of the dishwasher. Staff to use the warewashing sink until the dishwasher is serviced and can properly clean/sanitize. Corrective Action: Corrected at time of inspection.
