Addl Notes: Observed shell stock tags in the back log that were missing the majority of dates for September. The Chef spoke to staff about the correct procedure to track shell stock tags. Discussed with the person in charge that all shell stock tag must have the date that the last animal is sold. The tags should be retained for a minimum of 90 days. Corrective Action: Corrected at time of inspection.
