    2-102.12(A) Certified Food Protection Manager (C) The PERSON IN CHARGE shall be a certified FOOD protection manager who has shown proficiency of required information through passing a test that is part of an ACCREDITED PROGRAM. During inspection, no food manager certificates were observed. A certified food manager should be on staff while a kitchen or food establishment is operating. Upon next inspection, documentation of a certified food manager shall be shown to the inspector.
