3-304.12 - Core: In-Use Utensils, Between-Use Storage Addl Notes: Observed a “Refill Hot Water Every 2 Hours” sign posted at a metal container of water holding the in-use scoopers for boba and stir utensils. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly sent to the three-compartment sink to be washed, rinsed, and sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

4-101.11 (B-E) - Core: Characteristics- Multiuse; Durable, Nonabsorbent, Smooth, Easily Cleanable Addl Notes: Observed carboard boxes used to soak up spilled egg/grease near the grill area located back of house used to cooking eggs. All food-contact surfaces must be smooth, non-absorbent, and easily cleanable. PIC removed the carboard boxes at time of inspection. Corrective Action: Corrected at time of inspection.
