Proper cooling methods used; adequate equipment for temperature control
4-301.11 EQUIPMENT for cooling and heating FOOD, and holding cold and hot FOOD, shall be sufficient in number and capacity to provide FOOD temperatures as specified under Chapter 3. Make unit. Upon inspection the facility's make top unit was not able to maintain an ambient air temperature of 41F. PIC (person in charge) stated that repairs had been made but could not be completed due to an integral part not being in stock at the moment. The ambient temperature readings from the inspector's min/max thermometer ranged from 43F-48F as the unit fluctuated. The facility was utilizing time as a public health control for the TCS foods (pre made pupusas mixture) stored in the unit. The rest of the unit did not contain any TCS food items and the facility's main refrigeration unit was confirmed to be at 39F. PIC stated that the repairs will be able to be completed as soon as the necessary part arrives and that they will continue to use time as a public health control until then.
