4-302.13 (B) In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature. Dish machine In addition to a 3 compartment sink used for wash/rinse/sanitize operations, the facility was observed to have a high temp dish machine in use. When asked, staff could not locate an irreversible temperature indicator that verifies the highest temperature reached within the unit for sanitizing.
