  3-501.16 (A) Except during preparation, cooking, or cooling, or when time is used as the public health control as specified under §3-501.19, and except as specified under (B) and in (C ) of this section, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (2) At 5ºC (41ºF) or less. Open air refrigerators Upon using the IR thermometer the front row of milk in the open refrigerator was reading 44-45F. Upon getting an internal temperature the milk was at 45F. The Person in Charge (PIC) was asked how long the milk had been there and she stated it was just put out 30-45 minutes ago. Using the IR thermometer one of the bags of pepperoni and cheese had a reading of 44-45. Upon checking the internal temperature the pepperoni was 50F. Using the IR thermometer the salad at the corner of the open air refrigerator in front of the soda dispenser was 46F. Upon taking an internal temperature the chicken and cut greens were 50F.

  6-501.11 PHYSICAL FACILITIES shall be maintained in good repair. Walk-in freezer PIC stated that they were aware of a drip in the walk-in freezer that was accumulating ice on the floor. She stated maintenance was already aware of the issue and they had set up a time to fix it. They stated they think it could be water condensing on the equipment and falling to the ground instead of a leak. Upon entering the walk-in freezer there was an accumulation of ice on two spots of the floor.
